Job Title Chef Job Purpose
Alkantpan, a division of Armscor Research and Development (RD) Department, located near Prieska in the Northern Cape 300 km away from Kimberley, has a vacancy for a Chef for a 5 months’ fixed term contract. Applications are invited from people meeting the qualification and experience requirements below.
PURPOSE OF THE JOB:
Prepare tasty, quality meals for clients, design creative menu ideas, conduct pricing structures to obtain customer satisfaction with minimum cost of sales, and ensure that HACCP regulations are implemented and carried out at all times. Critical Performance Areas
Design menus and recipes to meet customer needs and industry standards.
Control Cost of Sales, control portions and quantities to be cooked on a daily basis.
Achieve targeted gross profits through effective portion control and wastage limitation.
Analyse recipes to assign prices to menu items, determine food production costs, overheads and labour costs.
Check quality of raw and cooked food to ensure that standards are met, and continuously demonstrate new cooking techniques.
Supervise and coordinate personnel in the food preparation area.
Determine how food should be presented, and create decorative food displays.
Coordinate planning, purchasing, budgeting of all food operations.
Do requisitioning of stock, materials, supplies and equipment to perform tasks.
Record production of goods on appropriate sheets.
Ensure that the kitchen, equipment, and storerooms are properly cleaned as per HACCP, the Food Safety Act and SHEQ requirements.
Expert Ability and Competencies Required
Qualifications:
National Diploma: Culinary/ Hospitality Management
Experience:
A minimum of 3 years’ relevant experience
Special proficiency / skills:
Planning skills
Verbal and written communication skills
Working under pressure
Problem-solving skills
Able to work in a team
